Badhusha, is an Indian sweet that is made out of Maida (all purpose flour) which is flaky inside and dipped in sugar syrup. According to me it is an Indian baklava as I could feel quite a few similarities between the same. This recipe is inspired from many YouTube videos but will give credit to ‘Madras Samayal’ channel for the recipe.
Let’s jump to the recipe.
The given list is for 10-12 pieces of the sweet.
- 1.5 cups of all purpose flour/ maida
- 50 g of butter
- 1/2 tsp of baking powder
- 2 tbsp. of yogurt
- 4 tbsp. of milk
- 1.5 cups of sugar
- 1/2 cup of water
- oil to deep fry
- a pinch of salt
- 3 cardamom shells
Getting the dough ready
- In a mixing bowl add the flour, butter, baking powder, yogurt,milk,2 tsp of sugar and a pinch of salt and mix them well into a dough. Do not knead much because the consistency has to be a little flaky. Basically, if you try to break open the dough it should look flaky.
- Once the dough is ready ,cover it with a soft kitchen cloth and keep aside for 10-15 mins.
- In a frying pan, add 1/2 cup of water to 1.5 cups of sugar and keep stirring it until it gets to ‘single string consistency’ (with the help of your thumb and forefinger, stick the syrup in between them to find out its consistency, it should be a single small thread ).
- Add a pinch of saffron and cardamom into the syrup.
Getting the badhusha ready
Make the dough into small patties (should not be flat) with a hole in the middle.(refer the pic. below)
- Deep fry the patties until it turns golden brown. Make sure to fry it in a medium flame so the inside of the dough gets cooked completely.
- Once cooked leave them inside the cooked syrup for 5 minutes, so the syrup can completely get into it.
- After a few minutes, remove them from syrup . You can add a few drops of lemon to prevent the syrup from solidifying.
Once cooled , top the badhusha with nuts like pistachios and almonds and it can be served.
